    I am looking for an un common group of enemies that would hole up, and defend a huge creature in a volcano.

    I don't want anything like Orcs, or Elvs or anything common.

    It really depends on what level party you are planning this encounter, the creature being defended, and how unordinary you want to make these creatures. For instance, you could say that the volcano has strong ties to the Elemental Plane of Fire -- or Elemental Chaos in the 4e cosmos, so it could be defended by anything from elementals, salamanders or any number of other fire based elemental creatures. For something a little more mundane, although you are specifically looking for something uncommon, you could use kobolds, who might venerate this huge volcano dwelling creature (dragon maybe?) as a god. But, perhaps these kobolds are unusual in some way? Perhaps the spill over from the Elemental planes has warped them in some way.

    Well fire giants are a natural for volcanoes, and conveniently CR 10.

    Oh, indeed, Fire Giants are a good one too! So, based on the level you are looking for elementals would work pretty well, fire giants, and maybe some toned down salamaders as well.

    Perhaps a fire giant mage summoning elementals?

    Fire giants, Magmamen, fire mepits, lava mephits, all that jazz....

    I would go for something completely off the grid. Try a demon spawn wizard who specializes in suggestion and domination type magic. Have a Doctor evil type setup with all sorts of oddities you would never think of in a Volcano, they are just controlled by the bad dude. Maybe some abyssal Flumps and insectoid templated owlbears...

    Fire Ginasi Sorcerers who use only certain elemental spells, like one who uses cone of cold and chilling touch and what not, then one with shocking grasp and lighting bolt ect, ect, ect....
