You can output the probability distribution for any combination of dice rolling, and actually have it roll for you.

I.e. instead of 3d6, you can do 1d4+1d8+1d10-2 to get a range of 1 through 20 while still having that bell curve.

A nice one is the mean in the summary tab. that way a power gamer can see what is the best thing for him.

AnyDice is probably the best dice probability program I've seen. I've used it a lot to visualize some really funky dice mechanics.

There's also a Dice Probability Calculator (http://www.anwu.org/games/dice_calc.html) for simpler "NdX+C" rolls, and Binomial Distributions (http://stattrek.com/online-calculator/binomial.aspx) for dice pool mechanics (assuming you know the probability of one success).
