I've heard of one-player DnD campaigns using guidebooks, but I haven't been able to locate any on google. Suggestions?

When you say "one player" do you mean the DM+1 or do you mean player w/o DM?

There is the Fighting Fantasy series of books by Steve Jackson and Ian Livingstone, but it is not exactly DnD: http://www.fightingfantasygamebooks.com/

I don't recall any 3.5 solo adventures. 1e did have a few for basic and expert D&D. Fighting fantasy is the most entertaining along with Lone Wolf series.
The other option is to move towards computer games that simulate D&D play.
